Crispy Zucchini Patties

These golden, crispy Zucchini Patties are a delightful way to enjoy fresh veggies with a savory twist. Packed with grated zucchini, herbs, and a touch of cheese, these flavorful patties are lightly pan-fried to perfection. Ingredients:

  • 2 cups Zucchini or 3 medium Zucchinis

  • 1 tbsp chopped onion

  • 1/4 cup Parmesan cheese

  • 1/4 cup flour

  • 2 large eggs

  • 2 tbsp mayonnaise

  • 1/4 tsp oregano

  • 1/4 tsp salt

  • 1-2 dashes black pepper

  • 1-2 tbsp olive oil

Instructions:

  1. Grate the zucchini: Squeeze the water out, slice the onion, and chop the oregano roughly.

  2. Blend everything in a bowl: Form you patties

  3. Heat up: the olive oil in a pan

  4. Fry the zucchini patties in the pan: Approx. 2 min of each side for golden crispy crust
