Turkey & Quinoa STuffed Peppers
Try these flavorful Turkey and Quinoa Stuffed Peppers for a wholesome, satisfying meal! Ingredients:
4 large bell peppers
1 cup cooked quinoa
1 pound ground turkey
1 can black beans, drained and rinsed
1 cup corn - frozen or canned
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1/2 cup shredded cheese - optional
Instructions:
Preheat Oven to 375°F
Prepare Peppers: Cut tops off of bell peppers, remove seeds, and place upright in a baking dish
Cook Turkey: In a skillet over medium heat, cook ground turkey 5-7 minutes until browned and drain excess fat
Mix Filling: In a large bowl, combine cooked quinoa, cooked turkey, black beans, corn, chili powder, cumin, salt, and pepper. Mix until well combined
Stuff Peppers: Fill each bell pepper with filling mixture, packing down gently. Sprinkle shredded cheese on top if desired
Bake: Cover baking dish with foil and bake for 25-30 minutes until peppers are tender.
Serve: Let cool for a few minutes before serving. Enjoy warm!
