Turkey & Quinoa STuffed Peppers

Try these flavorful Turkey and Quinoa Stuffed Peppers for a wholesome, satisfying meal! Ingredients:

  • 4 large bell peppers

  • 1 cup cooked quinoa

  • 1 pound ground turkey

  • 1 can black beans, drained and rinsed

  • 1 cup corn - frozen or canned

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • Salt and pepper to taste

  • 1/2 cup shredded cheese - optional

Instructions:

  1. Preheat Oven to 375°F

  2. Prepare Peppers: Cut tops off of bell peppers, remove seeds, and place upright in a baking dish

  3. Cook Turkey: In a skillet over medium heat, cook ground turkey 5-7 minutes until browned and drain excess fat

  4. Mix Filling: In a large bowl, combine cooked quinoa, cooked turkey, black beans, corn, chili powder, cumin, salt, and pepper. Mix until well combined

  5. Stuff Peppers: Fill each bell pepper with filling mixture, packing down gently. Sprinkle shredded cheese on top if desired

  6. Bake: Cover baking dish with foil and bake for 25-30 minutes until peppers are tender.

  7. Serve: Let cool for a few minutes before serving. Enjoy warm!
