Ingredients:

  • 1 packet Thai Kitchen instant rice noodle soup, or any dried ramen

  • 1-2 Starkist chicken pouch

  • 2 cups water or chicken stock

  • 1 - 2 eggs

  • Optional topping: furikake, soy sauce, lime, jalapeño, red pepper flake

Instructions:

  1. In a pot: combine water or chicken stock, contents of the seasoning packet, the Starkist chicken pouch(es), and optional red pepper flakes. Bring to a boil over medium-high heat.

  2. Once boiling, add the ramen noodles: Carefully crack the egg(s) into the pot, keeping it whole for a soft-boiled texture.

  3. Let the noodles cook and the egg poach for about 3-4 minutes: or until the egg reaches your desired level of doneness.

  4. Transfer to a bowl: top with furikake and soy sauce, if desired, for an extra flavor boost.
