Ingredients:
6 large eggs
1/2 cup diced bell peppers
1/2 cup diced tomatoes
1/2 cup shredded cheese
Salt and pepper to taste
Cooking spray
Instructions:
Preheat Oven: Preheat oven to 350°F (175°C). Spray a muffin tin with cooking spray.
Mix Ingredients: In a bowl, whisk eggs and season with salt and pepper. Stir in bell peppers, tomatoes, and cheese.
Bake Muffins: Pour mixture into muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until eggs are set.
