Creamy Tomato Basil SoUP

Ingredients:

  • 2 Garlic cloves - minced

  • 1 tbsp yellow union or shallots

  • 14 oz canned crushed tomatoes

  • 7 oz canned whole tomatoes

  • 1 cup chicken broth

  • Heavy cream or half-and-half

  • 2 tbsp fresh basil

  • 1 tbsp Olive oil

  • 1/2 tsp sea salt

  • 1/4 tsp Ground black pepper

Instructions:

  1. In medium sized pan: Add olive oil over medium heat, garlic and yellow union for 3 minutes

  2. Add crushed tomatoes: Then, add the whole tomatoes one at a time and break them in the pan.

  3. Add: chicken broth, salt, and pepper:

  4. Cook for 10 minutes: Stir occasionally over medium heat

  5. Reduce heat: Stir in heavy cream and chopped basil.
