Buff Breakfast Sandwich

These easy Make-Ahead Breakfast Sandwiches are perfect for busy mornings! Featuring your choice of crispy bacon or sausage, a perfectly cooked egg, and melty cheese on an English muffin, these sandwiches are a tasty, protein-packed start to your day. Just assemble, wrap, freeze, and reheat when you're ready for a quick, satisfying breakfast!

Ingredients:

  • 6 English muffins, bagels, or croissants

  • 6 large eggs (or 1 cup liquid eggs)

  • 6 slices of bacon or sausage patties

  • 6 slices of cheese

  • Salt and pepper, to taste

  • Cooking oil or spray

Instructions:

  1. Cook Bacon/Sausage: Cook in a skillet over medium heat 5-7 minutes or until crisp

  2. Cook Eggs:

    Option 1 - Fried: Cook eggs over medium heat, seasoning with salt

    Option 2 - Baked: Grease a muffin tin and bake eggs for 12-15 minutes at 350°F

  3. Assemble Sandwiches: Slice and toast bread of choice. Place an egg on the bottom half of each muffin. Top with cheese and bacon or sausage

  4. Serve or Prepare to Freeze: Wrap each sandwich tightly in foil or parchment paper and freeze
