Buff Breakfast Burrito

Start your day with these easy make-ahead Breakfast Burritos! Filled with scrambled eggs, crispy bacon or sausage, and melted cheese, they're a delicious and protein-packed way to fuel your morning. Perfect for meal prepping, just wrap, freeze, and reheat whenever you need a quick, satisfying breakfast on the go.

Ingredients:

  • 1 cup liquid eggs or about 8 large eggs

  • 6-8 slices bacon or 6-8 sausage links/patties

  • 1 ½ cups shredded cheese

  • 6-8 large tortillas - 10-inch works best

  • Hot sauce, to taste

  • Salt and pepper, to taste

  • Optional diced onions or bell peppers

Instructions:

  1. Cook the Bacon/Sausage:Cook in a skillet over medium heat until crispy, drain on paper towels and break into pieces once cooled.

  2. Cook the Eggs: In the same skillet using a bacon grease/sausage drippings, pour in the liquid eggs, season with salt and pepper, scrambling them until just set

  3. Assemble the Burritos: Lay out a tortilla and sprinkle shredded cheese, add a portion of scrambled eggs to the center, topping with bacon or sausage pieces. Drizzle with hot sauce to your liking.

    Fold in the sides of the tortilla, then roll it up tightly. Repeat.

  4. Serve or Prepare for Freezing: Wrap each burrito tightly in foil or plastic wrap to prevent freezer burn.

  5. Store the wrapped burritos in the freezer for up to 3 months and reheat in microwave.
