Black bean & Sweet Potato tacos

Ingredients:
2 medium sweet potatoes, peeled and diced
1 can black beans, drained and rinsed
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
4 small corn tortillas
Optional toppings - avocado, cilantro, lime
Instructions:
Preheat oven: 425°F (220°C).
Toss sweet potatoes with olive oil, cumin, chili powder, salt, and pepper: Spread on a baking sheet and roast for 20-25 minutes until tender.
In a skillet: warm the corn tortillas for about 1 minute on each side.
Fill each tortilla: with roasted sweet potatoes and black beans. Top with avocado, cilantro, and a squeeze of lime if desired.
