Black bean & Sweet Potato tacos

Ingredients:

  • 2 medium sweet potatoes, peeled and diced

  • 1 can black beans, drained and rinsed

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

  • 4 small corn tortillas

  • Optional toppings - avocado, cilantro, lime

Instructions:

  1. Preheat oven: 425°F (220°C).

  2. Toss sweet potatoes with olive oil, cumin, chili powder, salt, and pepper: Spread on a baking sheet and roast for 20-25 minutes until tender.

  3. In a skillet: warm the corn tortillas for about 1 minute on each side.
