Banana Oatmeal Pancakes

Ingredients:

  • 2 cups complete whole grain or multigrain pancake mix

  • 1 large firm banana, finely chopped

  • 1/2 cup old-fashioned oats

  • 1/4 cup chopped walnuts

  • Optional: Sliced banana, mixed fresh berries, confectioners' sugar and whipped cream

Instructions:

  1. Prepare the pancake batter according to the package directions: Stir in the banana, oats, and walnuts.

  2. Coat a hot griddle with cooking spray: Pour batter by 1/4 cupfuls onto the prepared griddle.

  3. Cook until bubbles start to form: pop on the pancake tops and the pancake bottoms turn golden brown. Flip the pancakes. Cook until the second sides of the pancakes are golden brown.
